The acid bath step does not remove the paint. The acid is used to do two things. Treat the rust and neutralize the base chemical that removes the paint.
Car bodies and parts soak in the acid solution generally for two days. Sometimes three days, but never more than three. After which they go through another full high pressure fresh water cleaning.
